| 2 lb. ground beef |
| 1 medium onion |
| 2 t. salt |
| 1 t. black pepper |
| dash hot pepper sauce |
| 1 c. tomato sauce |
| 1 c. shredded medium sharp cheddar cheese |
| 24 corn tortillas |

Brown beef and onion until onions are tender. Drain off excess grease. Mix in salt, pepper, pepper sauce, tomato sauce, and cheese, and blend until cheese is melted. Prepare tortillas by dipping briefly in hot oil (3 seconds per side). They should remain soft. Drain well on paper towels before filling with 2 level tablespoons of meat mixture. Roll up and secure with toothpick. Deep fry at 350° for 2 minutes or until crisp. Drain well. Serve with salsa for dipping.
