| 8 c. washed and torn spinach |
| 1 c. diagonally-sliced celery |
| 2 green onions, with tops, chopped |
| 11 oz. mandarin oranges, drained |
| 2 oz. slivered almonds, toasted |
| 1/4 c. vegetable oil |
| 2 T. vinegar |
| 2 T. sugar |
| 5 drops hot sauce |
| 1 t. chopped fresh parsley |
| 1 t. salt |
| dash pepper |
Combine vegetables; toss gently. Place on large serving platter; arrange mandarin oranges and toasted almonds in desired pattern on spinach mixture. Combine remaining ingredients in jar and shake vigorously. Pour dressing over salad.
Serves 6 to 8.
