Spinach-Apple Salad

8 slices bacon
2 lb. fresh spinach
1/2 c. salad oil
1/2 c. orange juice
2 T. lemon juice
1/4 t. dry mustard
1 t. sugar
1/4 t. salt
sprinkle pepper
1 apple, peeled, cored, and chopped

Fry bacon until crisp and dry. Drain, crumble, and set aside. Wash spinach leaf by leaf under cold running water. Blot dry. To prepare dressing, combine oil, orange juice, lemon juice, mustard, sugar, salt, and pepper. Beat with wire whisk until blended and frothy. Combine spinach, bacon, and apple. Pour dressing over and toss well.

Serves 8.
