Shrub, Strawberry Rhubarb

3/4 c. chopped rhubarb
3/4 c. chopped strawberries
1 1/2 c. sugar
3/4 c. apple cider and/or white wine vinegar
3/4 c. balsamic vinegar

Combine rhubarb, strawberries, sugar, and 1/2 c. water in a saucepan. Bring to a boil and cook, stirring occasionally, until the rhubarb falls apart into strands. Cool, and combine with vinegar.

Use in cocktails, or mixed with 3 parts seltzer/soda water.
