| 2 T. minced ginger |
| 2 T. minced garlic |
| 1/4 c. lower-sodium soy sauce |
| 1 T. dark brown sugar |
| 1 t. crushed red pepper |
| 2 T. dark sesame oil |
| 2 lb. pre-sliced stir-fry meat |
| 16 green onions, cut into 1" pieces (white and light green parts only) |
| 8 c. bagged baby spinach leaves |
| 2 T. sesame seeds |
Combine first 5 ingredients in a small bowl. Heat a wok or skillet over high heat. Add oil to pan; swirl to coat. Add a third of beef to pan, and cook for 3 minutes or until browned. Remove beef from pan. Repeat twice more with remaining beef. Add onions; cook for 1 minute. Add soy sauce mixture; cook 1 minute. Return beef to pan; cook 1 minute. Stir in spinach, and cook 30 seconds.
Serve, topped with sesame seeds.
