| 1/2 c. sugar |
| 1/4 c. cornstarch |
| 1/2 t. salt |
| 2 eggs, beaten |
| 1 c. pineapple juice |
| grated rind and juice of 1 orange |
| grated rind and juice of 1 lemon |
| 6 oz. pkg. cream cheese, softened |
Combine first 7 ingredients in top of a double boiler; cook over medium heat until smooth and thickened, stirring constantly. Remove from heat, cool. Beat cream cheese with electric mixer until fluffy; add cooked mixture, beating until well-blended. Chill. Serve with fresh apples or pears.
Makes about 2 1/2 cups.
