Wash and separate endive and remove tough ends from each leaf. Begin to form tree by attaching leaves to bottom of cone with florist picks, and move upward, completely covering cone with endive. Attach vegetables to endive-covered cone with wooden picks, arranging in desired pattern to resemble decorated Christmas tree. Place tree on tray or cake stand; arrange extra vegetables around base. Serve with onion dip.
Makes 8 dozen appetizer servings.
