| 4 medium baking potatoes |
| 6 slices bacon |
| 1/3 c. chopped green onion |
| 8 oz. sour cream |
| 1 t. salt |
| 1/2 t. pepper |
| paprika |
Bake potatoes, let cool to touch. Slice away skin from top of each potato, carefully scoop out pulp, leaving shells intact. Mash pulp. Fry bacon, reserving 3 T. drippings in pan. Crumble bacon and set aside. Sauté onions in drippings until tender. Combine onion, potato pulp, bacon, cheese sour cream, salt, and pepper, mix well. Stuff shells with potato mixture and sprinkle them with paprika. Microwave on high for 5 to 7 minutes or until thoroughly heated, giving dish one half turn.
