| 20 oz. pkg. chopped broccoli |
| 3 eggs, separated |
| 1 T. flour |
| pinch ground nutmeg |
| 1 c. mayonnaise |
| 1 T. butter, softened |
| 1/4 t. salt |
| 1/4 t. pepper |
| 1/4 c. plus 1 T. parmesan cheese |
Cook broccoli according to package directions; drain well. Beat egg yolks, then add flour, mixing well. Stir in nutmeg, mayonnaise, butter, salt, pepper and parmesan. Add broccoli, mixing lightly. Beat egg whites, at room temperature, until stiff but not dry. Gently fold into broccoli mixture. Pour into a lightly buttered 9" square baking dish. Bake at 350° for 30 minutes. Cut into squares and serve.
