Apple-Carrot Salad

2 c. shredded carrots
1 1/2 c. unpeeled, diced apples
1/2 c. raisins
1/4 c. chopped walnuts
1/2 c. mayonnaise
1 T. lemon juice
1 T. honey
lettuce leaves (optional)

Combine first 4 ingredients; set aside. Combine mayonnaise, lemon juice, and honey, stirring well. Pour dressing over carrot mixture and toss until coated. Cover and chill 2 to 3 hours. Serve on lettuce leaves.

Serves 6.
